We'll prepare several recipes of your choosing, tailored to your specific dietary needs. Learn how key ingredients--such as butter, flour, and eggs--function in your favorite cookies, cakes, and breads and how to make safe subsitutions. Or master techniques for making lasagna, meatballs, and pizza so good you'll never miss the cheese, eggs, and wheat.

Armed with a repertoire of basic, reliable recipes, strategies for making substitutions, and the confidence to adapt your own family's favorite recipes, you'll be cooking up an allergy-free storm in no time!

In this hands-on class we'll discuss how to mix a well-balanced vinaigrette, compose an elegant salad Nicoise, and combine vegetables and grains in hearty main dish salads. You'll learn how to keep vegetables bright and crisp, roast them to caramelized perfection, and pair them with cheeses, nuts, fruits, and other healthful ingredients to make salads that really sing.
